Now, that's a mouthful, isn't it? We just had a few mouthfuls of one of last years' chickens for an early supper and then got out of the house for a couple hours. There's nothing better than standing around a bird still hot from the oven and helping yourself to the crispy bits of rendered salty skin. Unfortunately, the dog helped herself to the rest of that chicken while we were away... She's usually awfully good about not taking food off the counter, but it's hard to blame her. At least it was all the white meat she ate—we're dark folk around here. Have to look on the bright side!
This year, we're planning to increase the number of birds we raise. Friends and family frequently tell us that our chicken is the most flavorful they've ever had. I'm sure the dog would agree. In order to help us with the initial costs of buying chicks and assembling tractors (mobile coops that can be pulled across pasture), along with grain and processing, we're opening a preorder program.
